Roasted beets are wondrous things. I use them a lot, mostly for salad. I think I have a book’s worth of beet salad recipes. Here’s the latest version, it’s garnished with crispy toasted pumpkin seeds which give it an interesting texture mix. Perfect for outdoor eating if you’re trying to grab in the last of the good weather or celebrating the jewish new year outside (or in) with family.
