I made this sandwich last week with my best friend and we loved it! As you know, I love fruit in everything, so I thought adding it to an amazing cheesy sandwich would be even better. And it was! I wish I was eating this right now!

Here is what you need for 2 sandwiches:

1/2 cup of blackberries cut in half

10 basil leaves

Fresh mozzarella cheese

4 pieces of fresh sourdough bread

1 cup of balsamic vinegar

Here is how you do it:

Step 1: Make a grilled cheese sandwich...with basil and blackberries

Step 2: Add balsamic vinegar to a pan on high heat. Stir continuously until it is thick.

Step 3: Pour balsamic glaze on top of sandwich and serve.

Step 4: Dig in!!!

This recipe is something I came up with by being broke and having eggplant in my refrigerator. 

I wanted to make something cheap, easy, and tasty, and thought of this. Pasta is the best cheap go-to...and the best way to gain weight...

I have never made Ratatouille before, even after the movie was made, and wanted to give it an interesting twist, as I do...so I added curry powder.

Here is what you need:

1/2 Eggplant

1 zucchini

1/2 sweet onion

1/2 jar of tomato sauce

1lb of pasta

2+ tbsp of curry powder

1 tbsp of cumin 

dash of cayenne pepper 

Here is how you do it:

Step 1: Dice the eggplant, zucchini and onion and put in pan with some olive oil on high heat.

Step 2: Boil a pot of water and add pasta once the water is boiled (duh).

Step 3: Add curry powder, cumin, and cayenne pepper to vegetables. Mix together until all spices are mixed together.

Step 4: Add tomato sauce to pan.

Step 5: Put pasta in a bowl and put the ratatouille on top.

Step 6: Enjoy.

If you are feeling risky, add goat cheese. Not that goat cheese is crazy, but yea...
