Lemon Ricotta Cookies from My Baking Addiction are a delightfully light and lemony treat for any occasion. Ricotta cheese and fresh lemon give these cookies a soft and tender texture with a citrus flavor burst.
Ingredients: 1 cup ricotta cheese. 1 cup granulated sugar. 1/2 cup unsalted butter, softened. 1 egg. 1 teaspoon vanilla extract. 2 tablespoons fresh lemon juice. 2 teaspoons lemon zest. 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup powdered sugar for rolling.
Instructions: Preheat the oven to 350F 175C and line baking sheets with parchment paper. In a large bowl, cream together the ricotta cheese, granulated sugar, and softened butter until well combined and creamy. Add the egg, vanilla extract, lemon juice, and lemon zest to the mixture, and mix until smooth. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in powdered sugar to coat completely, then place them on the prepared baking sheets. Bake for 12-15 minutes, or until the cookies are set and the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely. Optional: Dust the cooled cookies with additional powdered sugar before serving.
