Enjoy the cool taste of homemade mint ice cream without having to churn it. This creamy treat tastes like mint and can be made even more refreshing by adding fresh mint leaves.
Ingredients: 2 cups heavy cream. 1 can 14 ounces sweetened condensed milk. 1 teaspoon peppermint extract. Green food coloring optional. 1/2 cup chopped fresh mint leaves optional.
Instructions: In a large mixing bowl, whip the heavy cream until stiff peaks form. Gently fold in the sweetened condensed milk until well combined. Stir in the peppermint extract. Add a few drops of green food coloring for color if desired. Fold in the chopped fresh mint leaves for added texture and flavor. Pour the mixture into a loaf pan or airtight container. Cover with plastic wrap or a lid and freeze for at least 6 hours or overnight until firm. Once frozen, scoop and serve as desired.
