These Peppermint Mocha Brownies are irresistible because they have the perfect mix of rich chocolate, strong coffee, and cool peppermint. With crushed candy canes on top to make them look even more holiday, these brownies will be a hit at any holiday party or on a cozy night in.
Ingredients: 1 cup semisweet chocolate chips. 1/2 cup unsalted butter. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup all-purpose flour. 2 tablespoons cocoa powder. 1/4 teaspoon salt. 1/4 cup brewed coffee, cooled. 1/2 teaspoon peppermint extract. Crushed candy canes or peppermint candies, for topping.
Instructions: Set the oven to 350F 175C and heat it up. A 9x9-inch baking pan should be greased. Put the chocolate chips and butter in a bowl that can go in the microwave. Melt them together for 30 seconds at a time, stirring between each time until the mixture is smooth. Mix the sugar, eggs, and vanilla extract in a different bowl using a whisk. Slowly add the melted chocolate mixture to the sugar mixture while stirring all the time. Mix in the cocoa powder, salt, and flour until everything is just mixed together. It will be smooth after you add the peppermint extract and coffee that has been brewed. Spread the batter out evenly in the baking pan that has been prepared. If you stick a toothpick into the middle and it comes out with wet crumbs, the cake is done. While the brownies are still warm, take them out of the oven and sprinkle crushed candy canes or peppermint candies on top. Let the brownies cool all the way in the pan before you cut them into squares. Serve and have fun!
