This recipe provides a simple method for secondary fermenting water kefir to enhance its flavor and carbonation. The addition of fruits and herbs/spices infuses the kefir with delightful flavors, making it a refreshing and healthy beverage option.
Ingredients: 1 liter water kefir strained. Fruits such as berries, citrus slices, or chopped fruits. Herbs or spices optional, for flavoring. 1-2 tablespoons sugar optional, for increased carbonation.
Instructions: Prepare your choice of fruits and/or herbs/spices for flavoring. In a clean glass bottle with a tight-fitting lid, add the strained water kefir. Add the prepared fruits and/or herbs/spices into the bottle. If desired, add 1-2 tablespoons of sugar to enhance carbonation optional. Close the bottle tightly and let it sit at room temperature for 24-48 hours for secondary fermentation. Check the carbonation level periodically by gently opening the lid. If it's too carbonated, release some gas and reseal the bottle. After 24-48 hours, strain out the fruits and herbs/spices if desired and transfer the flavored water kefir to the refrigerator to chill. Serve chilled and enjoy!
