The beef short ribs are braised in a rich sauce made with chipotle peppers and red wine. The meat is tender and flavorful, with a hint of smoke and spice.
Ingredients: 4 lbs beef short ribs. 2 tablespoons olive oil. 1 onion, chopped. 4 cloves garlic, minced. 1 cup red wine. 1 can chipotle peppers in adobo sauce. 2 cups beef broth. 2 tablespoons tomato paste. 1 tablespoon brown sugar. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Warm the oven up to 175F 350C. Add salt and pepper to the short ribs. In a big Dutch oven, heat the olive oil over medium-high heat. If you need to, work in batches to brown the short ribs on all sides. Take it out and set it aside. Put the chopped onion and garlic in the same pot. About 34 minutes of cooking will soften the food. Add red wine to the pot and scrape up any browned food on the bottom. Beef broth, tomato paste, brown sugar, and chipotle peppers should all be added. Use a stir to mix. Put the short ribs back in the pot and cover them with the liquid. Cover and put in an oven that has already been heated. Let the meat cook for two and a half to three hours, or until it is soft and falls off the bone. Take it out of the oven and skim off any extra fat that forms on top. Before serving, sprinkle with fresh parsley.
