Streusel Topping Banana Nut Muffins
Part 1. Granola Streusel Topping Recipe
Ingredients:
1 Cup of All Purpose Flour
1/4 Cup of Slivered Almonds
2/3 Cup of Golden Brown Sugar
1/4 Cup of Granola
1/3 Cup of Chopped Walnuts
1/4 Teaspoon of Sea Salt
1/2 Cup of Cinnamon
6 Tablespoons of Unsalted Butter *slightly melted
1/3 Cup of Sugar
Directions: 1. Beat butter with a hand mixer or by whisk *(If machinery not available).
2. Mix well until smooth & creamy, slowly add your sugars, then combine the rest of the ingredients and mix until well integrated.
Part 2: Streusel Topping Banana Nut Muffins
Ingredients:
2/3 Cup of Milk
1 Tbsp. Lemon Juice
3 1/2 Cup of Flour
3/4 Tsp. of Salt
1 Tsp. of Baking Powder
1/2 Teaspoon of Baking Soda
1 Stick of Butter
2/3 Cup of Sugar
2 Large Eggs
3 Very Ripe Bananas
1 Cup of Chopped Walnuts
2 Tsp. of Bourbon Vanilla Extract
A Dash of Cinnamon
Directions:
1. Flick oven on and set to 375*
2. Peel and mash bananas.
3. Drop in Bourbon Vanilla & Cinnamon and mix well.
4. Add lemon juice to milk.
5. If butter hasn't melted at room temperature, feel free to melt the butter.
6. Sift flour into a large bowl, add baking powder, baking soda and salt. Mix together.
7. In a separate bowl crack open eggs, mix in sugar, drop in milk add melted butter.
8. Mix well.
9. Add sugary egg mixture to flour mix and blend well with a whisk.
10. Mix all ingredients well and pour gingerly into muffin pan.
11. Sprinkle streusel topping onto each of your muffins.
12. Turn your oven down to 350*.
13. Place muffin pan into oven.
14. Bake muffins for 18-22 minutes, you may insert a toothpick or a fork into muffins to check for doneness.
