You’ll need:
1 package of puff pastry (or make your own, I’m lazy!)
1 8oz (around 227 grams??) container of whipped cream cheese (or you could use a softened block)
1 egg (for egg wash)
1/4 cup sugar (32 grams)
1/2 teaspoon (2.84 grams) vanilla extract
Strawberry jam
Strawberries for topping (I made six pastries with half a strawberry on top, you could dice them if you want? It’s just what you enjoy!)
Instructions:
1- Mix cream cheese, sugar, and vanilla in a bowl until smooth
2- put your puff pastry out onto a lightly floured surface and cut into desired size. I made medium squares by cutting each sheet into four squares!
3- with your cut squares, put a dot of water in the middle (to hold the dough) and then take each corner and pull it to the center. The water will help ‘glue’ it in place
4- in the center of the dough (where all the corners meet) put a mini spoonful of strawberry jam, top with cream cheese mixture (holds the jam in) and then top with strawberry
5- brush egg wash on the rest of the pastry
Bake at 400° (I think that’s 204°C) for 15-20 minutes
For baking- it will depend on the strength of your oven, mine is a bit old and probably needs to be replaced so it took mine around 20 minutes but I set a timer for 15minutes and then checked it before extending the time
Orange you glad cookies
2 and ½ cups flour
½ tsp salt
The juice of 1 and ½ navel oranges
3 Tbsp of orange juice
The zest of 1 and ½ navel oranges
The zest of ½ navel oranges
3 Tbsp orange extract
1 cup butter
3 Tbsp powdered monk fruit sweetener
1 and ¼ cups sugar
½ tsp baking powder
One egg
Preheat oven to 350°f
Beat one egg, extracts, butter sugar, and flour, add juice of 1 and ½ oranges and zest of 1 and ½ oranges.
Sift in dry ingredients and combine.
Split into 32 parts.
Flatten each segment into a disk.
Put on a parchment lined pan.
Bake for for 9-11 min.
While cookies are baking, mix monk fruit sweetener with a Tbsp each of orange juice and orange extract.
Once cooled, glaze cookies and top with a pinch of orange zest.

ummmm i do 3/4 chai and 1/4 milk (usually unsweetened oat or soy) and a few teaspoons of maple syrup to sweeten! I usually have it iced unless it's really cold out, but it tastes great either way! below is the stuff I throw together and simmer to make chai from scratch if I have time-- but otherwise I use a brand called Chads Chai which I think is pretty good
2 cup water
2-3 teaspoon black tea (I use tea bags)
2 cardamom pods
1 clove
1 good knob of ginger, sliced
¼ teaspoon black pepper
cinnamon stick
anyone feel free to improve my basic chai recipe <3
