Recipe: Raw Vegan Cinnamon Rolls
Dough:
2-½ cups almond meal or nut meal (leftover from making nut milks)
2 cups golden flax meal OR white chia meal
1 cup packed soft pitted dates, soaked in ½ cup pure water
¼ tsp high mineral salt
dash cayenne
¼ cup olive oil OR coconut oil
Blend the dates and water together in a food processor or blender, until it becomes paste.
Mix all the remaining ingredients together with your hands in a large mixing bowl.
Place the dough on a teflex sheet or wax paper and form into thick ¼-inch square using your hands or a metal spatula to shape it.
Then cover the dough with another teflex sheet or wax paper and roll with a rolling pin until the dough is uniform thickness.
Cinnamon Raisin Filling:
1 cup packed soft pitted dates, soaked in ¼ cup warm water
1 cup raisins, soaked in ¼ cup warm water for 20 minutes
2 TBS cinnamon
¼ cup purified water
Optional:
½ cup soaked, dehydrated walnuts, coarsely chopped
1 med apple, shredded or julienned
¼ cup extra raisins
Puree the first four ingredients in a food processor until it becomes smooth.
Spread the mixture onto the dough, leaving one edge free of filling so that when you roll it, that is the end you seal.
Optional: Sprinkle with walnuts, extra raisins and shredded apple.
Using the teflex sheet on the bottom to push, roll the dough tightly.
Freeze for 1 hour or more.
Slice into ½-inch thick rolls.
Place the slices in dehydrator at 105 degrees (or lowest temperature in oven) until warm. Serve warm and dry to the touch, but still moist and soft.
Orange Frosting/Icing
1 cup pine, pili, or macadamia nuts
⅓ cup water
4-6 TBS honey
2 TBS orange or tangerine juice
¼ tsp orange or tangerine zest
2 drops orange or tangerine essential oil (optional if available)
1 tsp vanilla extract or 6 drops vanilla essence
Blend all ingredients until smooth and creamy. Add a little extra water if you want it thinner like icing.
Drizzle on top of dehydrated cinnamon rolls
To make regular icing just leave out the orange juice, zest and oil.
My Story
At the beginning of 2014 I was what I call a "processed person". My hair was bright pink, (I totally rocked it) wore tons of makeup and my nails were always perfectly polished. I was the perfect color of bronze thanks to the tanning beds that I used weekly. I only ate things that came in wrappers, grilled cheese was the extent of my cooking knowledge. I also smoked about a pack of cigarettes a day, took adderall (upper) every morning, serequel (downer) every night and my thyroid pill that they told me I would have to take for the rest of my life. Not to mention I was smoking weed and drinking almost daily. I was happy with this lifestyle. I only cared about what I looked like on the outside. I strived for perfection on the outside without thinking about the consequences of my body on the inside.
While I was living that lifestyle I got sick a lot. I constantly had a cough or runny/stuffed nose. I never let my body fully heal before going out partying again. And when I was sick, I was miserable. I missed out on Christmas because I could barely leave the bed. 2013 was full of fun, parties, sickness and hangovers.
End of January 2014 I started having digestion problems. Every time I took a bite or drink of something I had sharp pains in my gut. At times it was so painful it would bring me to tears. I went to the see the doctor a couple times, all they did was prescribe me pills. It eventually went away, still not sure exactly what was wrong but that was my turning point that I needed to take better care of my body.
In February 2014 I road tripped with a girl friend to Vegas, ending in Arizona where I stayed at my grandmas condo for 2 months. In those 2 months I went off my adderall, serequel, quit smoking and started eating better (what I thought was eating healthy). My main goal back then was to be skinny. At the store I remember buying: yogurt, eggs, cheese, jello, pudding, low fat ice cream, diet soda, canned beans, frozen fish, and fiber one bars.
In March 2014 is when things really started changing for me. The more research I did the more things I changed. I completely stopped wearing conventional makeup, for good. Started making my own deodorant and toothpaste, dyed my hair back to normal color (never to dye it again). Found some chemical free shampoo and conditioner. Started eating more fruits and veggies and less packaged foods.
Mid April 2014 I moved back to Washington. This is when I found the raw vegan lifestyle after doing more and more research. It just made so much sense to me, eat only the foods that mother nature provides in their natural state!
Fast forward to now- November 2014. I have now been living the raw vegan lifestyle (on and off, I'm not perfect) for almost 6 months and my life has completely changed. I practice the high fat/low carb raw vegan lifestyle which is lots of veggies, nuts and seeds, low sugar (fruit). My acne has finally cleared up after 12 years of struggle. I don't get sick anymore. I have WAY more energy. I don't have crazy mood swings like before. No more heartburn, indigestion, bloating, tummy aches, constipation, bladder infections, headaches. No more medications, my thyroid is completely normal.
I am a mom to be, due April 2015. I am so excited to raise my child and watch him thrive with the raw vegan lifestyle. I also hope to inspire others who want to change their lives for the better. I am starting this blog to share my stories, lessons learned, tips, and change lives, one bite at a time :)
