Rachel Ray's Inside-Out Pizzadilla
Ingredients:
1 Tablespoon EVOO (or oil of your choice)
2 garlic cloves, minced
2 pinces red pepper flakes
1 15-ounce can diced fire-roasted tomatoes, drained
1/4 teaspoon (couple pinches) dried oregano
Salt and Pepper
Tortillas
1 pound ball smoked mozzerella cheese, thinly sliced
1 cup fresh basil (20 leaves, torn)
Instructions:
In a small pot, heat EVOO.
Add garlic and red pepper flakes, cook for about a minute.
Add tomatoes. Season with salt, pepper, and oregano.
Simmer tomatoes for 2 min and remove from heat.
Build quesadilla on skillet. Cook for 2 minutes on each side.
Notes:
07/10/2024 - I paired it with some proscuitto that had been sitting in my fridge FOREVER but this would also be great with a caesar salad.
