Ingredients: 1.5 lbs pork belly or pork shoulder, thinly sliced. 1/2 cup soy sauce. 1/4 cup mirin. 3 tablespoons brown sugar. 4 cloves garlic, minced. 1 tablespoon ginger, grated. 1 tablespoon sesame oil. 1 tablespoon gochujang Korean red pepper paste. 8 small flour tortillas. 1 cup shredded green cabbage. 2 carrots, julienned. 4 green onions, sliced. 1 tablespoon rice vinegar. 1 tablespoon sugar. 1 teaspoon sesame seeds. Fresh cilantro leaves for garnish.
Instructions: Put soy sauce, mirin, brown sugar, ginger, sesame oil, and gochujang in a bowl and mix them together using a whisk. Make sure that all of the pork slices are covered with the marinade before adding them. Let it sit for at least 30 minutes; overnight is better for flavor. You can quickly make kimchi while the pork is marinating. Put shredded cabbage, carrots cut into thin strips, green onions cut into thin slices, rice vinegar, sugar, and sesame seeds in a bowl. Mix it all together, then set it aside for at least 15 minutes. Get a grill or grill pan hot, but not too hot. It will take about two to three minutes per side on the grill until the pork slices are fully cooked and have a little caramelized skin. For about 20 seconds on each side, warm the tortillas up on the grill. Put together the Korean BBQ Tacos by putting a lot of grilled pork on each tortilla. Sprinkle fresh cilantro leaves on top of the quick kimchi. Enjoy the tasty Korean BBQ flavors while the tacos are still warm.
