Ingredients: 2 cups mushrooms, sliced. 1 cup cherry tomatoes, halved. 2 cloves garlic, minced. 2 tablespoons coconut oil. 1 teaspoon dried oregano. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Fresh parsley for garnish.
Instructions: Heat coconut oil in a skillet over medium-high heat. Add minced garlic and saut for 30 seconds until fragrant. Add sliced mushrooms and cook for 5-6 minutes until they start to brown and release their moisture. Stir in cherry tomatoes, dried oregano, salt, and black pepper.
