These Cinnamon Crepes are the perfect mix of flavors. They are filled with creamy pumpkin mousse and have a crunchy graham cracker crust crumble on top. A delicious treat inspired by fall!
Ingredients: 1 cup all-purpose flour. 1 tablespoon granulated sugar. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 2 large eggs. 1 1/4 cups milk. 2 tablespoons melted butter. 1/2 cup canned pumpkin puree. 1/4 cup powdered sugar. 1/2 teaspoon ground cinnamon. 1/2 teaspoon vanilla extract. 1 cup graham cracker crumbs. 1/4 cup unsalted butter, melted.
Instructions: Mix the flour, sugar, cinnamon powder, and salt together in a bowl using a whisk. Put the eggs in a different bowl and beat them. Then add the milk and melted butter. Combine well. Mix the wet and dry ingredients together with a whisk until the batter is smooth. Put a nonstick skillet on medium heat and use butter or oil to lightly coat it. As you pour a small amount of batter into the pan, swirl it around to cover the bottom evenly. Once the edges begin to lift, cook for one to two minutes. Then flip and cook the other side for one more minute. Do this again with the rest of the batter to make more crepes. Mix pumpkin puree, powdered sugar, ground cinnamon, and vanilla extract until smooth in a different bowl. This is how you make the pumpkin mousse. For the graham crust crumble, put graham cracker crumbs and melted butter in a bowl and stir them together until they look like big crumbs. Put some pumpkin mousse on each crepe and roll them up to put it all together. Place graham crust crumble on top of the crepes and serve.
