For those who enjoy both pumpkin and chocolate, these flourless chocolate pumpkin muffins are the ideal paleo and gluten-free dessert. They are flavorful, moist, and simple to prepare.
Ingredients: 1 cup almond butter. 1/2 cup pumpkin puree. 1/4 cup honey or maple syrup. 1/4 cup cocoa powder. 1 tsp baking soda. 1/2 tsp ground cinnamon. 1/4 tsp salt. 2 large eggs. 1 tsp vanilla extract. 1/4 cup dairy-free chocolate chips optional.
Instructions: Turn the oven on to 350 degrees Fahrenheit 175 degrees Celsius and line a muffin tin with paper liners. Almond butter, pumpkin puree, honey or maple syrup, and cocoa powder should all be combined in a mixing bowl. Blend until thoroughly blended. Mix in the baking soda, salt, and ground cinnamon. Mix until well combined. Beat the eggs and vanilla extract together in a different bowl. Blend them until smooth after adding them to the pumpkin mixture. Add dairy-free chocolate chips to the batter if you'd like. Pour the batter into the muffin tin that has been preheated, filling each cup about two thirds of the way. A toothpick inserted into the center of a muffin should come out clean after 20 to 25 minutes of baking in a preheated oven.
