I used the warm oven with a tray of hot water in the bottom as a proofing box method to make 'em rise quickly and they're nice and fluffy.
They also kinda taste like pumpkin doughnuts.

I have pumpkin cake with cream cheese frosting. No, I'm not sharing.
Hell, by the time I opened the camera app on my phone half the cake had made it's way into my gob.

Recipe (see below). If you are sensitive to the baking soda taste in the recipe then a few teaspoons of lemon juice or cider vinegar stirred through just before you put the batter into your bundt tin helps.
Tip: generously butter the tin and then line it with sugar (like when you prep a cake tin with butter and flour). It give a nice crust and makes it very easy to remove from the tin.

I made pumpkin everything tonight (I had a crap tonne of cooked pumpkin to use up).
Some neutral flavour profile muffins (taste kinda like pumpkin scone but not the sweetened kind). Next time I think I'll butter up the cases and leave them in the oven a few minutes more. Not bad though.
Some pumpkin+spice cut cookie dough to make tomorrow after it's had an overnight in the fridge.
And a pumpkin bundt cake which has cracked on the top a little but should still be good. My oven's thermostat can be somewhat unreliable...
Is it 02:07 and the cake still needs a few minutes more in the oven, covered? Yes, it is. But it's not like I was going to be able to sleep any time before 03:30 anyway.
