Ingredients: 1 1/2 cups gluten-free flour blend gfJules recommended. 1/2 cup almond flour. 1/2 cup tapioca starch. 1/4 cup cocoa powder. 1 tablespoon instant coffee powder. 2 teaspoons caraway seeds. 1 teaspoon salt. 1 tablespoon molasses. 1 tablespoon maple syrup. 1 tablespoon apple cider vinegar. 1 1/4 cups warm water. 1 packet 2 1/4 teaspoons active dry yeast. 2 tablespoons olive oil.
Instructions: In a large mixing bowl, combine the warm water, maple syrup, and yeast. Let it sit for about 5 minutes until foamy. Add olive oil, molasses, and apple cider vinegar to the yeast mixture. Stir well. In another bowl, whisk together gluten-free flour blend, almond flour, tapioca starch, cocoa powder, instant coffee powder, caraway seeds, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until well combined and forming a dough. Transfer the dough to a greased loaf pan, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size. Preheat the oven to 350F 175C. Bake the bread for 35-40 minutes, or until it sounds hollow when tapped on the bottom. Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
