Roast pumpkin soup for dinner tonight. Fresh home grown in our own yard. 🎃🏡😋 Ingredients: 1/2 fresh pumpkin 1 small sweet potato 2 small carrots 1 onion 6 cloves garlic 3 rashes bacon 1 Tbs curry poweder 1 tsp nutmeg 2 1/2 cups of veg stock 1/4 cup thickend cream Fresh chives. Salt & pepper to taste. Toasted sour sough. Chop, and roast all Veg, in oven for 45ish minutes I had it on at around 160° fanforced. Put in slow cooker with spices, and stock cook on low for 2hrs, then blitz until smooth. Add more liquid if needed, add cream and blitz again to ensure it doesn't split. Serve with chopped bacon, chives and sourdough/bread of your choice.
