Ingredients: 2 cups leftover pulled pork. 8 tostada shells. 1 cup refried beans. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup chopped cilantro. 1 cup shredded cheddar cheese. 1/2 cup sour cream. 1 lime, cut into wedges.
Instructions: Preheat oven to 375F 190C. Spread refried beans evenly on each tostada shell. Divide the leftover pulled pork among the tostadas. Sprinkle shredded cheddar cheese over the pork. Place the tostadas on a baking sheet and bake for 10-12 minutes or until the cheese is melted and bubbly. Remove from the oven and let them cool slightly. Top each tostada with shredded lettuce, diced tomatoes, diced red onion, and chopped cilantro. Drizzle sour cream over the tostadas and serve with lime wedges on the side.
