I guess some people make Uzbek hanum with meat also. But not at Cafe At Your Mother in Law, a little BYOB eatery in Brighton Beach. There, it’s a thin sheet of dumpling skin, similar to a big shiu mai wrapper, swaddling a few fistfuls of potato shredded like hash browns. Topped with tomato, onion, and dill. I would eat this often, especially with some sour cream. (I would experiment with browning/crisping the potatoes for extra texture variation also. Though I wonder: is my suggestion something some people already do, or tantamount to Uzbek culinary sacrilege?)
