When the weather turns cold, I LOVE, LOVE, LOVE soups and stews. However, my husband and kids aren’t as thrilled. Granted, they love chicken & dumplings, chili, and beef stew, but that’s about it. So, it’s always a challege to come up with new soup ideas, in hopes of them liking it.

Our youngest son, Eli, loves potato soup, which is what inspired this creation. Why not…

Freezing sweet corn and making chowder

I’ve been enjoying fresh-picked sweet corn so much lately, I decided to save some for later. After I came home from Sauvie Island on Monday with eighteen extra ears of corn (we ate some of what I bought), I blanched it, cut it off the cob, and froze it. As it turned out, eighteen ears of sweet corn produced nine cups of kernels – one half cup per ear. I’m not sure I knew that before.

I wasted no time putting some of it to great use. I made potato-corn chowder last night with some of what I froze. The beautiful Yukon Gold potatoes and the little snips of chives came from our garden. Rounding out the meal was a plate of sliced garden tomatoes… a perfect meal in my opinion.
