TIL that most bread is made from hexaploid wheat, while most pasta is made from tetraploid wheat (i.e. these plants have 6 and 4 sets of each chromosome, respectively).
Polyploidization in general is one of the most important speciation mechanisms in plants [1], and whole-genome duplication in particular is a key element of the plant domestication process [2]. For more about wheat ploidy, see [3].
