This Kamut and Plum Salad with Chili Dressing is a delightful combination of nutty kamut, sweet plums, and a zesty chili dressing. It's a perfect blend of flavors and textures that will satisfy your taste buds.
Ingredients: 1 cup kamut. 2 cups water. 4 ripe plums, pitted and sliced. 2 cups mixed greens. 1/4 cup chopped fresh cilantro. 1/4 cup chopped fresh mint. 1/4 cup chopped red onion. 1/4 cup chopped roasted peanuts. 1/4 cup crumbled feta cheese. 1 red chili pepper, thinly sliced adjust to taste. 3 tablespoons olive oil. 2 tablespoons lime juice. 1 tablespoon honey. Salt and pepper to taste.
Instructions: Put kamut and water in a medium-sized saucepan. Bring to a boil, then lower the heat to a simmer. Cover and cook for 30 to 40 minutes, or until the kamut is soft but still has some chew to it. Take out any extra water and let it cool down. Cooked kamut, sliced plums, mixed greens, cilantro, mint, red onion, roasted peanuts, and crumbled feta cheese should all be put in a large bowl together. Mix the honey, lime juice, olive oil, and red chili slices together in a small bowl using a whisk. Add pepper and salt to taste. Pour the chili dressing over the salad and gently toss to mix. Serve right away as a tasty and refreshing salad.
