If there’s one thing in life I couldn’t possibly live without it would be #cheese 🧀. It’s my vice, I’m a massive #cheeselover and when the cold weather starts creeping in it’s the best comfort food around 😍. I’m a huge fan of a cheesy Chicken Parmo….if you’re not from ‘up north’, as well as Northern boys (and girls) loving gravy - and cheesy chips a Parmo is up there with the best creations ever. LIKE EVER. Whoever invented a pizza on a chicken breast is a legend 🍗🍕. Especially when it’s smothered in the food of the gods…cheese. And I ALWAYS choose @pilgrimschoice Here’s my quick and easy Parmo recipe. Serves 2. Prep time 10-15 mins. Cooking time 20-25 mins Ingredients 2 Chicken breasts, flattened 2 slices of bread (brown seeded works best) 2 eggs (one full, one white) 90-100g #PilgrimsChoice Mature Cheddar 3-4 slices of Pepperoni per person 2 tbsp tomato puree 1 red chilli 2 garlic cloves Small bunch of coriander Salt & pepper to season Method 1 - Add bread, garlic, 1/2 chilli and coriander to blender. Blend thoroughly until crumbed. Empty into bowl 2 - Crack 1 egg and one egg white into a bowl, whisk quickly with fork for 15 seconds 3 - Coat flattened chicken breast in the egg, then into breadcrumbs 4 - Heat pan with oil, add chicken breast, fry on both sides until cooked thoroughly 5 - Remove from pan, set aside. Heat grill 6 - Spoon on tomato puree and load with lots of cheese, top with pepperoni and chilli 7 - Grill until cheese has melted and is bubbling 8 - Serve with salad or rice (or if you’re feeling REALLY Northern, cheesy chips) and enjoy! Last minute trip to the beach today which meant a quick decision on food! While my hubby had beans on toast with cheese I opted to use a ww wrap as my HEB and cheese as my HEA.
