Who knew I'd be cooking with my favorite Pik-Nik one day? Here's my latest kitchen experiment - - Pik-Nik Chicken Bites! This is super easy! Just swap your regular breading with crushed Pik-Nik Shoestring Potatoes, and you have that crunchy potato crust on your favorite chicken bites! What's good is that it kept the chicken tender and juicy but has that crunchy exterior that my kids loved! I wanted to channel the Korean corndog craze with all that potato on the breading, but these chicken bites turned out way better. Now, what to do more with these leftover Pik-Nik Shoestring Potatoes?
