When you pickle, whatever you’re pickling will release juice that adds to the brine! I never fill my pickle jar all the way to the top / I always leave some room for more liquid (also I don’t can, so don’t look to me for food safety questions about canning procedures, but this is probably a thing that isn’t recommended because I think air is bad?). The first photo, I took just before putting these pickled peaches in the fridge at 4:45pm; the second photo is from 1pm; and the final photo is from just after the brine came off the stove, piping hot at 9:30am. The liquid will keep coming while the jars sit in the fridge.
