I put up so many pickled garlic scapes today and still have half a cooler's worth, oops.
Soak off any remaining dirt in a bucket or sink. I'd just cleaned my sink so it was ideal.
Trim them into buds, sticks, and rounds while the jars are running through a sterilization cycle in the dishwasher.
Fill jars as artistically as possible at first, eventually give up (because I ran out of rounds) and just stuff them in there. Add preferred spices (I made two pints of spicy dill, two pints of 'normal', four pints of dill, four pints of spicy, and two pints of a sweeter one using Bulk Barn's pickling spice). Fend off cats who are excessively curious, and rewash your hands every time you have to yeet a 14-16lb fuzzybutt off the table.
Make the brine, fill the jars and leave a bit of headspace, and shove them in the canning pot. Process for 10min. Pray none explode or lose their seal. Mourn when one leaks and you have to swap the water in the giant canning pot because that sucker is heavy. Leave to cool, repeat until satisfied.
Unlabeled ones are still cooling.
