Ingredients: 1 cup almond flour. 1/4 cup unsweetened cocoa powder. 1/4 cup powdered erythritol. 1/4 cup coconut oil, melted. 1/2 teaspoon peppermint extract. 1/4 cup sugar-free dark chocolate chips, melted. Crushed sugar-free peppermint candies for coating optional.
Instructions: In a bowl, mix almond flour, cocoa powder, and powdered erythritol. Add melted coconut oil and peppermint extract. Mix until a dough forms. Roll the dough into small balls and place them on a parchment-lined tray. Chill in the fridge for 20 minutes. In a microwave-safe bowl, melt sugar-free dark chocolate chips.
