This flourless pecan chocolate cake is a rich, luscious, and remarkably simple gluten-free treat. It has a wonderful nutty flavor from the ground pecans, and a luscious touch from the melted chocolate. Ideal for any time of day or whenever you're in the mood for some delicious chocolate!
Ingredients: 1 1/2 cups pecans, finely ground. 1 cup semisweet chocolate chips. 1 cup granulated sugar. 1/2 cup unsalted butter. 4 large eggs. 1 teaspoon vanilla extract. 1/4 teaspoon salt. Powdered sugar for dusting optional.
Instructions: Preheat your oven to 350F 175C and grease a 9-inch 23cm round cake pan. In a microwave-safe bowl, melt the chocolate chips and butter together in 30-second intervals, stirring in between, until smooth. Allow it to cool slightly. In a separate bowl, whisk together the eggs, granulated sugar, vanilla extract, and salt. Gradually pour the melted chocolate mixture into the egg mixture, stirring continuously until well combined. Fold in the finely ground pecans until the batter is homogeneous. Pour the batter into the greased cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Remove the cake from the oven and allow it to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
