Indulge in the rich flavors of caramelized pears combined with creamy ice cream. This dessert offers a delightful blend of sweetness and fruity goodness, perfect for any occasion.
Ingredients: 2 ripe pears, peeled, cored, and diced. 1/4 cup brown sugar. 2 tbsp butter. 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 5 large egg yolks. 1 tsp vanilla extract.
Instructions: In a skillet, melt butter over medium heat. Add diced pears and brown sugar, cook until pears are caramelized, stirring occasionally. Set aside to cool. In a saucepan, combine heavy cream and milk. Heat over medium-low heat until just simmering, then remove from heat. In a separate bowl, whisk together granulated sugar and egg yolks until pale and thick. Slowly pour the warm cream mixture into the egg mixture, whisking constantly to prevent curdling. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and coats the back of a spoon about 5-7 minutes. Do not boil. Strain the custard through a fine-mesh sieve into a clean bowl. Stir in vanilla extract. Let the custard cool to room temperature, then cover and refrigerate until completely chilled. Once chilled, churn the custard in an ice cream maker according to manufacturer's instructions. During the last few minutes of churning, add the caramelized pears. Transfer the churned ice cream to a freezer-safe container and freeze until firm.
