Ingredients: 1 tbsp olive oil. 1 onion, chopped. 2 cloves garlic, minced. 2 carrots, diced. 2 celery stalks, diced. 1 bell pepper, diced. 1 zucchini, diced. 1 can 14 oz diced tomatoes. 4 cups vegetable broth. 1 tsp dried oregano. 1 tsp dried basil. 1/2 tsp dried thyme. Salt and pepper to taste. 1 cup cooked small pasta optional. Fresh basil leaves for garnish optional.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Cut up the onion and garlic and add them. Saut until the food smells good. Carrots, celery, bell pepper, and zucchini should all be cut up. Make it until it gets a little softer. Chicken broth, dried oregano, dried basil, dried thyme, salt, and pepper should all be added now. Once the soup starts to boil, lower the heat and let it cook for 20 to 25 minutes, until the vegetables are soft. To use pasta, cook the pasta and add it to the soup. Then heat it through. Check the seasoning and make changes if needed. If you want, you can serve it hot with fresh basil leaves on top.
