creamy cheezy cauliflower MOCK ‘N CHEESE! I know I know... nothing could compare to the real deal Easy Mac, but this sauce made with cauliflower and roasted peppers is so lightened up that you can now have a heaping plate of this stuff without regret. so I’ll take that trade and save the real cheese cravings for a special day.🧀 yay for veggie substitutes! Mock ‘n Cheese: (mock Easy Mac for big kids) Cheezy Cauli Pepper Sauce: 4 cups steamed cauliflower 1/2 cup unsweetened nut milk 1/2 cup light/fat free cream cheese 1/2 cup @lifewaykefir farmers cheese (or more cream cheese) 1/2 cup roasted red peppers 1 tsp smoked paprika 1 tsp garlic & herb seasoning (salt free) 1 tsp ground mustard 1/2 tsp cumin 1/2 tsp lawry’s seasoned salt 1/2 tsp black pepper 1/4 tsp nutmeg — Directions: 1. Blend EVERYTHING up in a blender or food processor until the sauce is creamy! Salt to taste, and you can play around with seasonings and fresh herbs, too. 2. Preheat oven to 350 degrees. 3. Boil 1 pound of macaroni noodles (or desired pasta) until al dente. 4. Prepare a 9x13 inch glass pan, sprayed with olive oil. 5. Strain noodles and pour into pan. Pour sauce over cooked noodles and stir well. 6. If you’re feelin it, top with shredded cheese (I used almond mozzarella) and breadcrumbs (I used crushed up croutons... because #pantrycleanout). Spray the top with olive oil before baking so it browns! 7. Bake at 350 for 20 minutes. Pop it on broil at the end if you can’t get that cheeese to melt.
