Ricotta chicken baked in a pan is a tasty and cheesy dinner that will warm you up. Marinara sauce is used to bake the chicken breasts after they are filled with a creamy mixture of ricotta, Parmesan, and mozzarella cheeses that has garlic and basil added to it.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup ricotta cheese. 1/2 cup grated Parmesan cheese. 1/2 cup shredded mozzarella cheese. 1/4 cup chopped fresh basil. 2 cloves garlic, minced. Salt and pepper to taste. 1 cup marinara sauce. 1 tablespoon olive oil.
Instructions: Preheat the oven to 375F 190C. In a mixing bowl, combine ricotta cheese, Parmesan cheese, mozzarella cheese, basil, garlic, salt, and pepper. Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each chicken breast with the ricotta mixture. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until golden brown. Transfer the chicken breasts to a baking dish. Top each breast with marinara sauce. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly. Serve hot, garnished with additional basil if desired.
