Ingredients: 2 cups almond flour. 1/2 cup coconut flour. 1/2 cup erythritol or monk fruit sweetener. 1 teaspoon baking powder. 1/2 teaspoon cinnamon. 1/4 teaspoon salt. 1/2 cup coconut oil, melted. 1/4 cup pumpkin puree. 1 egg. 1 teaspoon vanilla extract. 1/2 cup chopped pecans.
Instructions: Preheat your oven to 350F 175C. Grease or line an 8x8-inch baking dish with parchment paper. In a large mixing bowl, combine the almond flour, coconut flour, sweetener, baking powder, cinnamon, and salt. Add the melted coconut oil, pumpkin puree, egg, and vanilla extract to the dry ingredients. Mix until well combined. Press half of the mixture into the bottom of the prepared baking dish to form the crust. Sprinkle the chopped pecans evenly over the crust layer. Crumble the remaining dough over the top of the pecans to form the crumble topping. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set. Remove from the oven and allow to cool completely before slicing into bars. Serve and enjoy these delicious paleo pumpkin crumble bars!
