Paleo "Meltykiss" Fudge - Citrus
Meltykiss was one of my favourite chocolate treats of all time. They come in different flavours and they're like a flavoured truffle that just melts in your mouth. It's wonderful, it's delicious, it's fun, it's also VERY NOT PALEO.
So last night as I felt pathetic and small and sick I decided I want to make something chocolaty to treat myself, but I also want to stick to paleo. After some research on what chocolate is paleo acceptable, how coconut cream works with chocolate and such, I came up with these paleo "Meltykiss" fudge squares.
300-350g dark chocolate with 85% or higher cocoa
1 tbsp vanilla extract or 1 pod of vanilla beans
zest of 1/2 orange (or more if you prefer a stronger flavour)
Set up a double boiler (hot water on the bottom, with a bowl on top) to melt the chocolate. You CAN directly melt chocolate over the stove in a sauce pan but you run into the risk of burning the chocolate. So I ALWAYS do it with a double boiler:
Once the chocolate is melted, heat the cup of coconut cream on low heat, until it's boiling gently. Fold in the melted chocolate, add the vanilla and the lemon and orange zest and whisk quickly to mix well. Make sure the heat is on low to medium, you don't want to burn the chocolate.
I laid down a piece of parchment paper in a 10" x 10" pyrex glass container, feel free to use any type as long as it's got a flat bottom, and then poured the chocolate mixture down.
Let chill in the fridge for at least 5 hours before handling, if you can resist the temptation, leave it overnight.
I couldn't resist, so I took it out right before going to bed and checked on it.
It had set quite well, nice and solid. My husband was so excited he grabbed a knife and cut it right up...
I grated a little bit more lemon zest on top, it was absolutely amazing. My husband ate 4 squares, I ate 1 to taste, the chocolate must MELTS in your mouth, it's so rich and creamy, with a hint of coconut and the citrus just fills your mouth. The fresh zest adds a new depth to the chocolate, and cuts through the richness quite nicely. All in all, it was a total success for a first try.
Now this isn't completely a Meltykiss yet, but I plan to experiment with new flavours, like strawberry and raspberry, and thinking about covering them in cocoa powder so they don't melt so quickly between the fingers. Who knows what else I'll come up with! Until then, I'll be nibbling on these sweet little things all week!
