Ingredients: 12 shucked oysters. 1 cup cornmeal. 1/2 cup all-purpose flour. 1/2 teaspoon kosher salt. 1/4 teaspoon cayenne pepper. 1/4 teaspoon freshly ground black pepper. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon paprika. Vegetable oil, for frying. 4 6-inch soft French bread loaves, split. Lettuce leaves. Sliced tomatoes. Sliced pickles. Mayonnaise. Hot sauce.
Instructions: Preheat vegetable oil in a deep-fryer or large pot to 375 degrees F 190 degrees C. In a shallow dish, combine cornmeal, flour, salt, cayenne pepper, black pepper, garlic powder, onion powder, and paprika. Dredge oysters in the cornmeal mixture, shaking off any excess. Fry oysters in batches until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels. Spread mayonnaise on the split French bread loaves. Layer lettuce leaves, sliced tomatoes, and pickles on the bottom halves of the bread. Top with fried oysters and drizzle with hot sauce. Close sandwiches with the top halves of the bread. Serve immediately and enjoy!
