La ricetta tradizionale dell'Ossobuco alla Milanese * Ingredienti per 4 persone - 4 tranci di stinco di vitello alti 4 cm. ("geretto" circa 300 g. l'uno), tagliati nella parte bassa, dove l'osso è piccolo e ripieno solo di midollo, non di osso spugnoso - Farina bianca - 50 g. di burro - 1/4 di cipolla tritata - Un mestolo di brodo - Un piccolissimo pomodoro fresco spellato e tritato o la punta di un cucchiaio di salsa di pomodoro (non indispensabile) - Sale Per la "gremolada" - Buccia di un limone grattugiata - Mezzo spicchio di aglio (non indispensabile) - Un'acciuga diliscata - Una manciata di foglie di prezzemolo tritate Preparazione In un tegame largo imbiondire la cipolla nel burro, mettere gli ossibuchi leggermente infarinati, rosolarli da ambo le parti, voltandoli senza pungerli. Versarvi un poco di brodo, il pomodoro (in quantità minima perché la cucina milanese ha resistito più di altre cucine all'introduzione di questo ortaggio che nel '700 aveva già conquistato molte altre cucine), il sale, coprire il tegame e portare a cottura a fuoco lento per un'ora e mezza circa, finché hanno un aspetto leggermente glassato. Cinque minuti prima di servire, aggiungere la "gremolada", ossia un trito di buccia gialla di limone, prezzemolo, aglio e acciuga, mescolare bene e servire con risotto alla milanese.
Slow cooked Pork Shank (Ossobuco): A Milanese speciality of cross-cut veal or pork shanks, Ossobuco is slow cooked with vegetables, wine and broth. The modern and more popular recipe replaces the broth with tomatoes. Traditionally, Ossobuco is cooked in a casserole dish. We’ve simplified the cooking using a slow cooker. There is nothing like coming home to the wonderful smell of this hearty Italian meal.
Ingredients: 4 pork shanks 2 medium sized onions, cut in cubes 2 medium sized carrots, cut in cubes 2 medium sized peppers (the color of your choice), cut into cubes 1 cup of dry red wine 1 can (540 ml) of diced tomatoes 2 tbsp of Spaghetti spice 1 clove of garlic
Method: Place the cubed vegetables and garlic into the bottom of the slow cooker. Sprinkle each side of the pork shanks with the spaghetti spice. Place the shanks on top of the vegetables. Pour over the can of tomatoes and the red wine. Cover and set the slow cooker to high. Allow to cook for 6 – 8 hours. Serve with your favorite pasta or rice.
