Bring a big pot of water to boil. Blanched beansprout for 1.5 minutes. 2. Drain well on colander and set aside to cool down. 3. Add soy sauce, shallot oil and sesame oil in a mixing bowl. Transfer drained beansprout to mixing bowl and toss well.
