This Asian-style dish has tender steamed chicken and tasty greens that have been marinated in soy sauce, garlic, and ginger. It's a great meal for people on the keto diet because it's healthy and filling.
Ingredients: 4 boneless, skinless chicken breasts. 2 cups bok choy, chopped. 1 cup green beans, trimmed. 4 cloves garlic, minced. 2 tablespoons ginger, minced. 3 tablespoons soy sauce or tamari. 1 tablespoon sesame oil. 1 tablespoon rice vinegar. 1 teaspoon erythritol or monk fruit sweetener. 1 teaspoon sriracha sauce optional. Salt and pepper to taste. Sesame seeds for garnish. Green onions for garnish.
Instructions: Season chicken breasts with salt and pepper. In a large bowl, mix together garlic, ginger, soy sauce, sesame oil, rice vinegar, sweetener, and sriracha. Place chicken breasts in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes. Prepare a steamer. Place bok choy and green beans in the steamer basket. Arrange marinated chicken breasts on top of the vegetables. Steam for 15-20 minutes, or until chicken is cooked through. Garnish with sesame seeds and sliced green onions before serving.
