Another quick and easy way to make lasagna is with skillet lasagna. You can save time and work by cooking everything in one skillet. The food will still taste great. This recipe is great for busy weeknights when you want something comforting to eat.
Ingredients: 1 lb ground beef. 1 small onion, diced. 3 cloves garlic, minced. 1 24 oz jar marinara sauce. 1 1/2 cups water. 8 oz lasagna noodles, broken into pieces. 1 cup ricotta cheese. 1 cup shredded mozzarella cheese. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. Fresh basil leaves for garnish optional.
Instructions: In a large skillet, brown ground beef over medium heat until no longer pink. Drain excess fat. Add diced onion and minced garlic to the skillet. Cook until onions are translucent and garlic is fragrant. Stir in marinara sauce and water. Bring to a simmer. Add broken lasagna noodles to the skillet, stirring to combine. Cook for about 10-12 minutes, or until noodles are tender, stirring occasionally. In a small bowl, mix together ricotta cheese, salt, and pepper. Once noodles are cooked, dollop spoonfuls of ricotta mixture over the top of the skillet. Sprinkle shredded mozzarella and grated Parmesan over the ricotta. Cover the skillet and let it sit for a few minutes until cheese is melted and bubbly. Garnish with fresh basil leaves if desired before serving.
