TGIF Olympic Party Dessert - Eton Mess
We have been counting down to this Friday because we are super excited for the London Olympics to commence! We decided to theme our TGIF post this week with a simple English dessert, which will be perfect for an Olympic themed party.Â
What you will need for your Eton Mess:
MeringuesÂ
Strawberries
Icing Sugar (1 TBLS)
Double Cream
When it comes to your meringues you have 2 options in Hong Kong. You can:
A) make your meringues from scratch - we love this recipe by Delia Smith. However be warned meringues are difficult to make in humid conditions which is tricky to avoid in Hong Kong.
B) cheat a little and buy 'Pavlova Magic' (a meringue mix used for making the meringue base of pavlova) from shops such as Oliver's and City Super. If you are not familiar with what Pavlova Magic looks like here is a photo and it is usually found in the baking aisle.Â
Once you have your meringues in the oven, take half your strawberries and put them in a blender/food processor with 1 TBLS of icing sugar and mix until it is completely pureed.
Then chop up the rest of your strawberries into small pieces.
Using a whisk or an electric mixer whip your double cream until it is fluffy and soft peaks form.
Once your meringues have cooled, break them up into sizable pieces.Â
The last step is to assemble your Eton Mess! Some people like to chuck everything in together (making its name very appropriate), but here at Sweet Soirées we care about presentation and therefore like to layer our Eton Mess tidily. First put a base of broken meringues at the bottom, then add a layer of chopped strawberries, followed by a healthy layer of whipped cream and a drizzle of strawberry puree. Repeat this until your glass/bowl is full. For an extra touch add a couple strawberries to the top!
