I wanted to use puffed quinoa while baking. The biscuits are a small ball about the size of very heaped teaspoon but larger cookies would work too!
Puffed Quinoa Golgi Protein Cookies
1 cup puffed quinoa
90g nuttlex
½ cup raw or coconut sugar
1 egg (replacer)
1 cup self-raising flour
1 scoop vanilla protein powder (I use Sunwarrior)
¼ golgi berries
Melt butter and blend all ingredients together
Bake in 180ºC oven for 10-15 minutes.
