Ingredients: 1 cup quinoa, rinsed. 2 cups almond milk. 3 eggs. 1/2 cup maple syrup. 1 teaspoon vanilla extract. 1 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup raisins. 1/2 cup chopped nuts e.g., almonds or walnuts. Fresh berries for garnish.
Instructions: Preheat the oven to 350F 175C. In a saucepan, combine quinoa and almond milk. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until quinoa is cooked and the mixture thickens. Remove from heat and let it cool slightly. In a bowl, whisk together eggs, maple syrup, vanilla extract, cinnamon, and salt. Gradually add the egg mixture to the quinoa, stirring constantly to combine. Fold in raisins and chopped nuts. Transfer the mixture to a greased baking dish. Bake in the preheated oven for 30-35 minutes, or until the edges are golden brown and the center is set.
