Ingredients: 1 cup cashews, soaked overnight. 2 medium apples, diced. 1/4 cup raisins. 2 tablespoons lemon juice. 1 tablespoon maple syrup. 1/4 teaspoon cinnamon. Pinch of salt.
Instructions: Drain and rinse soaked cashews. In a blender, combine cashews, lemon juice, maple syrup, cinnamon, and salt. Blend until smooth and creamy. In a mixing bowl, toss diced apples and raisins with the cashew cream dressing until well coated. Chill in the refrigerator for about 30 minutes before serving to allow flavors to meld.
