These easy vegan nut butter bars are perfect for a quick and delicious snack. They require no baking and are packed with plant-based goodness.
Ingredients: 1 cup vegan nut butter of your choice. 1/2 cup maple syrup or agave nectar. 2 cups quick oats. 1/2 cup chopped nuts such as almonds, peanuts, or cashews. 1/4 cup vegan chocolate chips optional.
Instructions: Mix the vegan nut butter and maple syrup or agave nectar together in a large bowl until the mixture is smooth. Put the chopped nuts and quick oats in the bowl and mix them together well. Cover a square baking dish with parchment paper. Press the mixture into the dish so that it is evenly spread out. If you want, you can spread vegan chocolate chips out evenly on top of the mixture and gently press them into the bars. At least one to two hours, or until the bars are firm and set, put the dish in the fridge. After the bars have been chilled, take them out of the dish and cut them into squares or bars. The bars can be kept in the fridge for up to a week in a container that doesn't let air in.
