is there any recipe you have that can brighten a day?
great question i could interpret multiple ways
my first instinct is to respond with the thing i make when i do not have the energy to cook but i still want something on the healthier side. i take one to school with me basically twice a week. i could live off of these things and they are very versatile and also a great way to teach you how to wrap burritos:
dippy wraps (serves 1-2 / prep time 3-5 min / cook time 3-5 min)
ingredients:
burrito grande (or "cafe") tortillas [guerrero or la banderita are ones i can usually find but i understand these are less common in big grocery stores the further you get from the border. these are the most important part of them imo. thick mission tortillas and shit just do not cut it]
salad mix [make it yourself or buy a bag of it - whatever kind you want]
lunch meat [i prefer chicken/turkey breast and don't really go for ham but you do you]
tortilla chips [technically optional but imo not the same without them. i highly recommend going with spicy doritos or even takis]
1/4 cup or so of custom sauce [go wild with this shit or keep it simple. whatever you've got. treat this like whatever sauce you would like in a sandwich OR burrito. you could just go sour cream and i highly recommend that as a base but i like to mix a bunch of shit together to make the flavour more complex to compliment the more bland salad and lunch meat. we don't normally have sour cream on hand so i sub it for greek yogurt and mix it with some kewpie, cholula, peri peri, dijon, and black pepper. sometimes i will throw in salsa verde or leftover hot sauce packets and stuff]
(optional) cilantroooooooo
instructions:
create your sauce
microwave your tortilla for 30 seconds
with a fork, spread your sauce across the tortilla in an even layer. leave about half an inch from the edges unsauced
dump a generous pile of salad mix horizontally in the middle, leaving about 3 inches empty at the edges
(optional) cilantroooooooooo
add lunch meat to your desired amount (i only go with 2 slices tbh)
crush up your chips and sprinkle them on top
wash your hands of the chip shit
wrap the wrap up like a burrito
stick it in a ziploc for later or cut it in half and serve
perfect for a broke depressed college student especially if you have a costco membership cuz the lunch meat is the most expensive part. they sell some pretty good turkey breast at costco. their salad mix is alright but if you dont eat one like 2-3 times a week the salad mix will get gross in the fridge after a week or two. i prefer wraps to sandwiches cuz they are more portable and hold everything better
