We've been trying to sneak some more vegetables into her diet. I wouldn't necessarily call these "pancakes" but more of a bland hashbrown-like patty.
#PickyEater took a bite and threw the rest to the dog. I'm not sure if there was too much visible green for her to like their appearance or if she honestly didn't like the flavor. Her mom didn't think they were the best but ate a few to make me feel good for the effort. Come to think of it, I don't even know if the dog liked it!
There was another similar recipe that involved making a batter of the cauliflower and making ACTUAL PANCAKES... Maybe we'll try that one next time.
The recipe itself was easy enough though. The cauliflower was easy to mash up and the recipe made a dough-like consistency that was easy to spoon into patties, but not pancakes. This recipe would probably make good finger foods with sour cream at a party for people who have never watched Top Chef.
