Using zucchini noodles zoodles instead of regular noodles makes this vegan version of Pad Thai taste great and be good for you. It's simple to make and tastes great!
Ingredients: 4 medium zucchinis, spiralized into zoodles. 1/2 cup peanut butter. 1/4 cup soy sauce. 1/4 cup lime juice. 2 tablespoons maple syrup. 2 teaspoons sriracha sauce. 1 clove garlic, minced. 1 red bell pepper, thinly sliced. 1 carrot, julienned. 1/2 cup chopped cilantro. 1/4 cup chopped peanuts.
Instructions: In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sriracha sauce, and garlic to make the sauce. In a large skillet, heat some oil over medium heat. Add the bell pepper and carrot, and saut for about 5 minutes, or until they begin to soften. Add the zoodles to the skillet and pour the sauce over them. Toss everything together and cook for another 3-4 minutes, or until the zoodles are tender. Remove from heat and stir in cilantro. Serve the Pad Thai Zoodles topped with chopped peanuts.
