Let me go on the record by saying that I simply love 💕 fried bitter melon. Hard to find, but OH MAN was I excited to see that the local produce joint down the street had them for sale this week! Burger, sweet potato ginger soup, spinach salad, paleo naan.

Made a quick lunch of carnitas tacos with the empanada dough I overcooked while sending photos of said dough and recipe to my mother so I may be included in future family empanada/pastelillo chow downs when I visit. My apparent mild A.D.D and unnecessary useless multi-tasking condition leads to a good mistake every once in awhile. And that's not cheese or sour cream on them, it's @anitasyogurt 's amazing coconut yogurt mixed w cilantro, lemon, scallions, and coriander. It's the only covonut yogurt I've had that I can use in place of sour cream and greek yogurt (which had been my sour cream replacement fir some time). You need this yogurt in your life.
