I end up feeling there is still so much more to explore. Mutta Mala is one of those rare Indian desserts made with egg. This is a classic #Malabar dessert that reminded me of floating islands or French Ile Flottante. Created by Chef @shri_bala at the recent Deccan Delights festival at #Kanak at #Trident, this could well be India’s answer to well plated desserts of the west. We have the tastiest halwas and sweets, but come to think of it, they lose out on the presentation as most look like a goey mass. . . While this delicate concoction of a fluffy egg white soufflé type of base with the yolks made into thin strips or flat noodles on top. Together they make a sensational combination and look beautiful.
